Can’t-Mess-Up Stir Fry/Fried Rice | Weeknight Meals

Today I am sharing my absolute FAVORITE recipe that I make. What constitutes a favorite meal of mine? One, is it Asian inspired? That’s always good in my book. Two, can you look through your fridge and use whatever meat and vegetables you have on hand? Three, do I have to do any measuring? No? I’m on board. And four, does it all end up combined in one pot or pan? I mix up almost all my meals in one bowl anyways, so when it’s supposed to be eaten that way, it’s even better!

This meal has all four. It’s my Can’t-Mess-Up Stir Fry/ Fried Rice. You can keep it as a stir fry, but lately I have been adding the rice back into the wok and combining it all, so I call it fried rice.

First, what do you need?

– rice

– vegetables of choice (I love to use peppers, onion, carrots, cabbage, broccoli, squash, green beans, asparagus… ok literally anything)

– peanuts

– meat of your choice- I like chicken, beef, pork or shrimp, so once again… literally anything.

For the sauce, you can keep it simple with just some soy sauce, garlic, a little sugar and some ground red pepper if you like a little heat. This time though, I got a bit fancy. If you want to get fancy too, here are the seasonings you will need:

– chili oil

– sesame seed oil

– soy sauce

– curry powder

– ground cumin

– minced garlic

– sugar

– ginger

– green onion

One of the other reasons I love this is you can cook most of it ahead of time – very important for busy moms or most humans in general. I baked my chicken earlier in the day with some cumin and curry powder. I also steamed my rice and let it cool.

Next, chop then saute your vegetables in chili oil and sesame oil. Be careful with the chili oil if you don’t want it too spicy. While it is cooking, season with garlic, salt and pepper.

Make your sauce. Combine green onion, soy sauce, garlic, ground red pepper (unless you were like me and used too much chili oil), sugar, and ground ginger. I wish I could give you measurements, but I can’t. This is really to taste and might take some experimenting based on what you like.

Add your chicken and peanuts to the wok along with half of the sauce. Heat chicken through.

Mix your rice into the meat and vegetables. Add the rest of the sauce and cook long enough for the rice to heat up.
