My husband has always loved beets, but we only discovered his love for FRESH beets (as opposed to that cold, canned crap you get at a salad buffet) when I cooked them for him for the first time a year or so ago.
I recently also learned that my toddler will devour them too. Literally. He will scarf down his portion so fast that both me and my husband end up giving him our beets too. They’re so good for him after all, we can’t resist!
Even more recently I tried out a recipe (chock full of blue cheese & walnuts) and created what is now my husband’s most favorite way to eat beets.
I can say that with confidence too because, for him, not much can trump a recipe with blue cheese. Lucky for me, it’s super easy!
Just roast your beets as you would normally and let them cool!
Then, add a few simple ingredients. This can be easily changed to fit your liking too. Feta and pine nuts would be a good substitute or throw in fresh herbs of your choosing 🙂 The world is your oyster. Or well, this beet salad is anyways.
We served it up with some good old shrimp sauteed with old bay (MD baby), couscous and fresh spinach. Perfection!
