Peanut Butter & Jelly Protein Cookies | Healthy Recipe

I know, I know. It’s probably never been done before. 

Anyways, today I’m here with a new recipe. I’ve seen many peanut butter protein recipes before and even some PB&J protein balls out there an always wanted to give them a try.

With my hubby going away for a month, I was trying to come up with some food he could take with him and figured this was the perfect time to put my own spin on these babies and created my very own Peanut Butter & Jelly Protein Cookies.

Tip 1: Use whatever sweetener you like. I used brown sugar Splenda blend, but if you prefer real sugar, go for it. If you like honey or liquid stevia, have fun! Using a liquid sweetener shouldn’t change the texture much.

Tip 2: If you use real peanut butter (less liquidy than PB2) and/or more oatmeal you could probably get away with making these no-bake protein balls. My recipe creates a more sticky batter that needs to set in the oven (and results in a fabulous texture).

Tip 3: If you’re big on the “J” part of PB&J, add some more. These cookies lean on the peanut butter side because that’s my style.
