Roasted Brussels Sprouts with Cranberries & Walnuts (Holiday Side Dish) | What To Eat Wednesday

Could the title of this blog post BE any longer? (Chandler voice, obvi)

Today we’re talking about a vegetable side dish that would be great for a holiday party, Christmas dinner or just whenever your heart desires. When I think of winter vegetables, I think roasted root veggies. Brussels sprouts and beets are my two favorites.

This time though, I had to forgo the beets (soon, though!) and went with brussels sprouts that I spruced up a bit to make them appear fancier, but really (don’t tell anyone) the recipe is actually, super easy.

Brussels sprouts are one of the best vegetables. I said the other day that I don’t trust people who don’t like brussels sprouts. I was kidding (kind of), but I honestly don’t understand people who claim to dislike them. If they say that, they probably haven’t tried them as an adult which is not okay in my book. I have a whole theory about picky eaters and what that says about them as a person, but I’ll save that tangent for another day. 😉
