Strawberry Pistachio Baked Oatmeal

I’m super excited about sharing this recipe with you today, but then again I’m not sure that I’m ever not excited to share a recipe with you. This one, though, is a beaut. 😉

I’m the WORST about breakfast. I make my son breakfast every morning, but me? If I don’t already have something made or there isn’t something I’m craving like crazy, I’ll just skip it. Bad Sarah.

Usually, I will meal prep egg muffins, which are also great, but this is a new go to. This baked oatmeal is perfect to make on a Sunday and eat throughout the week. Filling and wholesome. Top with some greek yogurt for a bit of extra protein or top with some syrup for some extra sweetness.

I’m particularly excited about the flavor combo I chose for this recipe. At first I thought I would use blueberries and walnuts, but then I thought: strawberries. Walnuts would go great with strawberries too, but the first nut that came to my mind was pistachios!

Pistachios are probably my favorite nut…and the most addicting, #amiright? The blueberry/walnut combo would be great too, along with banana nut or bananas and raspberries. Honestly, whatever fruit is in season or you’re in the mood for would likely work great.

  1. I love baked oatmeal, especially in the winter, but I may make an exception to turn on my oven to make this because it looks amaaazing! <3!
