Greek Chicken Meal Prep | with Tzatziki & Cucumber Salad

I may not be on top of my blogging game lately, but I’m back on that meal prep game!

One day I’ll be back on that blog game too….. one day…

This week we’re eating Greek food! You have to try this one.

Honestly, this one is super easy with hardly any active cooking time. I do cut some corners (thank the Lord for Greek salad dressing) because, really, meal prep is MEANT to save you time, right? These simple recipes are super delish, but feel free to use your own homemade seasoning if you prefer.

TIP: Don’t serve them in the containers like I do. The tzatziki and cucumber salad are much yummier cold with the chicken and couscous warm. I work from home, so it’s no problem for me to scoop it out while I microwave the chicken and couscous, but for most people it would be more convenient to put the tzatziki and cucumber salad into another small container. I know there are some you can buy that fit within a larger container. So basically, don’t do what I did 🙂

This meal has 4 parts, so let’s get started!

Chicken:

5 chicken breasts

1/2 bottle of Greek salad dressing

Slice the chicken in half so they are thinner. I also recommend slicing it into strips. Marinate chicken in dressing for an hour or overnight. Cook using your desired cooking method- I pan seared them but you can grill or bake them too.

Cucumber Salad:

1 container cherry tomatoes

1 red onion

2-3 cucumbers

1/2 bottle Greek salad dressing

Chop tomatoes in half, slice onion and chop cucumbers. Place in a large plastic bag with dressing to marinate for an hour.

Tzatziki:

1.5 cups plain, non-fat Greek yogurt

1 cucumber, diced

1 clove of garlic, minced

3 tsp dried dill

dash of salt and pepper

Combine……. that’s literally it. I could eat this stuff on everything!

Couscous:

1 tbs olive oil

2 cloves garlic, diced

salt and pepper, as desired

2 tsp oregano

2 cups couscous

Boil 2 cups of water with oil, garlic, salt, pepper, and oregano. Spice it up to your liking! Once boiling, add couscous and cook according to package directions – usually place lid on pot and let sit off of heat for 5 minutes.

🙂 I kid, but speaking of, my family totally doesn’t get my meal prep game. Does your family do it? I feel like it’s a newer thing, my mom definitely never did it. She will prepare a salad on Sundays for the week but that’s about it.

Anyhoo (I say that too much, or write it… I never actually say it out loud) this one is a winner! Literally a winner, winner chicken dinner. Omg. I’m so cringey. I need to shut up.
