Glazed Salmon with Garlic Asparagus | Recipe

This is one of the first recipes I perfected after graduating college and becoming a real person… just adjusted a bit to make it healthier!

What you will need for the salmon:

Three 4 oz. salmon filets

1/4 cup Calorie Free Syrup (I recommend Walden Farms, if not, Smuckers has Sugar Free Syrup. Just find your best option!)

2 Tbs. Dijon Mustard

Salt and Ground Black Pepper

How to cook the salmon:

It’s easy! Preheat oven to 425 degrees. Wisk the syrup, mustard and dash of salt and pepper in a small bowl. Spray baking dish with oil, place salmon on dish, brush each filet with the mustard mixture.

Bake for 20-25 minutes until fish flakes easily with a fork!

What you will need for the asparagus:

1-2 Tbs. Olive Oil

Salt and Ground Black Pepper

3 Cups Asparagus

1 Clove of Garlic (minced)

How to cook the asparagus:

Even easier! Preheat oven to 425 degrees. Spread asparagus out on the baking dish, drizzle with the oil (as much as needed to coat it lightly, you can always add more later), sprinkle with the minced garlic, salt and pepper based on your preference. Toss so that everything is evenly coated.

Bake in the oven for 10 minutes, take out of the oven. It’s shouldn’t need more time, but test it. If it does, toss it so that nothing sticks and bake for 2-5 more minutes.

Serving size & macros: 

4 oz of salmon with 8 oz of asparagus (about 1 cup)

Salmon: 250 Cal, 3 g. Fat, 5 g. Carb, 26 g. Protein

Asparagus: 48 Cal, 1 g. Fat, 8 g. Carb, 4 g. Protein
